For our meat and protein needs, we are happy to partner with Mondo & Sons – a fourth generation family-owned butcher shop and meat processor focusing on locally sourced and sustainably raised proteins. They are custom crafters of small batch artisanal hams, bacon, sausage and dry aged meats.
For our cheese piroshky, we work with another local partner – Tillamook! Since 1909, they’ve been dedicated to making the best cheese with the best ingredients. They work with local farmers, who cared for the land, which sustained healthier cows, which provided better milk – a recipe that hasn’t failed them in over a century. We are happy to work with partners who care so deeply about their ingredients and sustainable farming practices.
And for our Uli’s Jalapeno & Cheddar Cheese Sausage, of course, we partner up with Uli’s Famous Sausage. Our Pike Place Market neighbor and a long-time partner, Uli’s Famous Sausage is locally owned and operated by German Master Butcher Uli Lengenberg, with over 40 years of experience in sausage production. Uli’s Famous Sausage is made daily from the best cuts of meat, the finest in-house blended spices, and, most importantly, with love for their craft and customers.

About:
Phinn is a piroshky filled with salmon pâté. When Phinn the Salmon Piroshky was just a little pie, they knew they wanted to be a star. Lucky for them, they were born with the perfect ingredients to achieve their dreams! Made in the Pacific Northwest, they originally called the Pike Place Market in Seattle home.
Inside a glass case on a countertop in a very tiny bakery, they found residence among the other delicious piroshky. Every day, once the ovens turned on, the aroma would waft out of the bakery and into the market, which would always create a line out of the door.
Behind the glass counter, they loved the way everyone in line looked at them with admiration and joy, and they wanted to make everyone feel the same.
Sometimes they could hear fishmongers at the Market Entrance throwing their relatives up in the air and people clapping with awe and joy, which always brings a lot of nostalgia from Salmon’s early days.
Phinn was happy knowing that people loved their food as much as they loved making it.
As much as they loved living in the bakery, the Salmon Piroshky would dream of adventure with the wish to warm hearts and hands everywhere. Whether it was exploring the beautiful Pacific Northwest, going on a walk in their paper bag through the city, or cheering on the home team at a game, this little pie was made to be on the go! It even enjoyed its therapeutic time in the freezer once in a while!
So, they set out into the world, making friends wherever they went. Hikers, foodies, athletes, tourists, celebrities, travelers, chefs, entire families, and even kids, everyone loved them! Word spread quickly, their willingness to go anywhere anytime makes them the perfect mealtime companion.
Even with their newfound fame and popularity across the globe, they knew their journey was far from over! Salmon Piroshky’s desire for stardom and adventure only grew stronger over time. Now was the moment for them to spread their little fins and fly.

Every year, around this time, the familiar aromatic scent of our popular holiday cake returns, as our bakers begin to bake off the first batches of our Kulich.
The Kulich is a traditional Russian bread, that is both airy and soft, lightly dotted with raisins, where each bite delivers a sweet, citrusy, and buttery note.It is a wonderful addition to any meal or Easter table.
Made by hand, and with love, our bakers mold the batter into a beautiful, towering cylinder, that is left to raise in a mold (some even use coffee tins to execute this molding).
Our Kulich is then gently baked in our oven, and once finished and cool, it is lightly glazed with icing and festive colorful sprinkles, reminiscent of the blossoming flowers of spring.

Migrating Eastern Europeans brought their recipes with them, and piroshky are now a common fast food as far east as Kazakhstan, Tajikistan, Uzbekistan, Turkmenistan, Kyrgyzstan, and Mongolia.

With your hands, of course! Piroshky is designed to be eaten directly from the hand without plates or flatware. Although you can eat piroshky hot or cold, the tastiest is when they’re pulled straight from the oven. Traditionally people enjoy piroshky as a snack or part of a meal.
What does the word piroshky mean?
The word piroshky (пирожки́) is a diminutive form of pirogi (пироги), the Russian word for “pies.” Literally, piroshky translates to “pielings” or “piesies.” Both words are plural; the singular of piroshky is piroshok (пирожок) and the singular of pirogi is pirog (пирог).
How long have piroshky been around?
People have been making piroshky for at least a thousand years. They were present at and documented at feasts in medieval Kyiv, at tables of Vladimir the Great.
It’s popularly believed that the wives of eighteenth-century mine workers developed them as convenient lunches for their husbands to take to work.
Piroshky remain popular today just as much for their convenience as their deliciousness.
What does piroshky look like?
A typical piroshok is roughly rectangular (or occasionally crescent-shaped)Traditional Piroshky are most commonly shaped like an ellipse, and then the second most common form is roughly rectangular. They are made of yeast-leavened dough that completely encloses its filling.
Similar Eastern European pastries of other shapes include coulibiac, kalitka, rasstegai, khachapuri, and vatrushka.
Piroshky are usually large enough to fit comfortably in the hand, although smaller versions can be served with soups.
What’s the difference between pierogi and piroshky?
The Russian word pirogi and the Polish word pierogi are homonyms. Despite the phonetic similarity, the words describe different types of cuisine: pirogi can be any type of baked or fried pie, while pierogi are boiled stuffed dumplings.
The Russian word for dumplings is “pelmeni” and the Ukrainian word for dumplings is varenyky.
Can you freeze piroshky?
Yes, you can! Frozen, piroshky keeps for 4 to 6 months. Sweet piroshky can be left at room temperature for 2 to 3 days, but also freeze nicely. We recommend sealing in an airtight container or plastic before freezing.
Can you reheat piroshky?
Absolutely! Piroshky are happiest when warmed in the oven, 325° F to 350° F wrapped in foil. Approximately 10 minutes if refrigerated. If frozen, make sure that your piroshky are completely thawed before reheating to ensure that they will reheat evenly from the inside and out.

BONUS Facts:
Piroshky Piroshky owns a trademark on the shape of our Smoked Salmon Pâté Piroshky. Only a few other companies, who were producing salmon piroshky of a similar shape before we secured the trademark, are allowed to duplicate our pattern.
Piroshky found its way to America with the surge in immigration among Russian Jews escaping religious persecution in the late nineteenth century.
The phrase on the back of our t-shirts (вот такие пироги) is pronounced “vote teh-KEE-yeh pyer-oh-GHEE” and translates as “These are the pies.” The phrase is colloquial; if declared confidently, it conveys strong confidence in the quality of our product.
Although potatoes make a satisfying filling for piroshky today, potatoes were not commonplace in Russia until the mid-nineteenth century. Before that, turnips and rutabagas were the primary root vegetables.

St. Patrick’s day is marked annually on March 17th. The Irish have observed this religious holiday for over 1000 years. As immigrants made their way to America, it became a way to honor their heritage while embracing their new homeland. It often came with parades, food, and a little bit of partying.
Though he is the patron saint of Ireland, many of the holidays’ traditions began here in America. Records show that a St. Patrick’s Day parade was held on March 17, 1601, in a Spanish colony in what is now St. Augustine, Florida.
Corned Beef & Cabbage, The meal that has become a St. Patrick’s Day staple across the country, is also an American innovation. While ham and cabbage were eaten in Ireland, corned beef proved a cheaper substitute for impoverished immigrants.
Many of today’s traditions made to commemorate the day developed in the United States, with The Irish are now adopting St. Patrick’s Day traditions from Irish America such as corned beef and cabbage.

Our Chocolate Cream Hazelnut roll is made with house-made hazelnut Chocolate with actual bits of Hazelnut.
The Cheddar Garlic Roll is filled with award-winning naturally aged creamy Tillamook cheddar cheese, fresh green onions, and garlic until it is bursting with flavor.
Veggie Chipotle is filled with crumbled Field Roast, a spicy Mexican plant-based sausage seasoned to perfection with cumin and oregano. From sweet to savory, each one of our menu items is crafted with care.

Our best-selling Beef and Cheese piroshky has award-winning, naturally-aged cheddar from Tillamook Cheese and fresh beef from Mondo & Son’s meatpacking. This fourth-generation family-owned butcher shop uses locally sourced and sustainable proteins. Our Spinach, Ham & Cheese Piroshky contains their small-batch artisanal ham.
