On August 17th, the historic Pike Place Market turns 115 years old. Together, let’s celebrate the Market’s unique characteristics and history!

Pike Place Market is one of Seattle’s most popular tourist destinations and is renowned for its fresh seafood, produce, flowers, and artisan-crafted goods. It also happens to be the location of our flagship Piroshky Piroshky bakery.

On August 17th, the historic Pike Place Market turns 115 years old. Together, let’s celebrate the Market’s unique characteristics and history!

ABOUT PIKE PLACE

On August 17 of this year, Seattle’s Pike Place Market turns 115 years old. In that time, it has grown from just eight farmers independently selling their produce from wagons and carts to a thriving community of over five hundred farmers, craftspeople, buskers, shops, and restaurants. Pike Place Market is now among Seattle’s most popular and recognizable destinations, referred to by many residents as “the soul of Seattle.” In celebration, let’s reflect on the Market’s unique characteristics and history.

BEFORE THE MARKET

Celebrating Pike Place Market begins with recognizing Seattle’s real need for it in 1907. Before then, established local farmers had to use middlemen to distribute their products within the rapidly growing city.

These “commission houses,” many of which were concentrated along Western Avenue, were notoriously deceitful. They would wildly inflate customer prices while aggressively undercutting farmers, cleverly shielding themselves from accountability with elaborate legal fictions. Their dishonesty prompted farmers and customers to petition the Seattle City Council for a change.

Pike Place Market Initiative 1917

That change came in 1907, when Councilman Thomas Revelle introduced an ordinance to establish a farmer’s market along Pike Place, a small street running parallel to Western Avenue just up the hill. It passed, giving farmers the freedom to sell directly to customers; twelve days later, the Pike Place Public Farmer’s Market was officially inaugurated.

EARLY YEARS AND EXPANSION

In the early years, the Seattle ordinance limited Pike Place Market’s hours of operation between 5:00 AM and noon. However, demand for the Market was extraordinary. In 1909, the Athenian (which is a restaurant today) opened as an inn for travelers, making the Market an early destination for tourists.

By 1910, the city doubled the number of vendor stalls and opened the newly constructed “sanitary market,” an area that did not allow horses. Further expansion of buildings and infrastructure would continue until 1922, by which time the Market looked much like it does today.

Pike Place Market has faced several close calls with dissolution or destruction throughout its history. Interestingly, the Great Depression was not among them. In fact, the Market expanded during the 1930s, albeit slowly, by opening a dance hall in the Economy Market Building.

The Market was a critical public resource during the worst of the Depression era and into the 1940s, ensuring that residents retained access to affordable goods and produce despite shortages and rationing.

The first serious threat to Pike Place Market came in December of 1941 when a massive fire gutted the sanitary market. Wartime paranoia prompted an arson investigation, but the cause was never determined. Ultimately, the fire caused over one hundred thousand dollars in damages (over two million in today’s dollars).

A second, even greater threat came shortly thereafter, with the internment of Japanese-Americans. At that time, three-quarters of King County’s produce and half of its milk came from Japanese-American farmers, whose presence at the Market was unmistakable.

Internment, and the difficulty Japanese-Americans experienced re-establishing themselves in its aftermath, brought the Market into a deep decline. The composition of its farmers changed permanently.

Blue Bonnet Sue Wagon – 1960’s

It wasn’t until 1963 that Pike Place Market faced a sustained, organized effort to dissolve it entirely. Backed by both the mayor and the city council, several large real estate developers proposed the total demolition of Pike Place Market in favor of the “Pike Plaza” urban renewal project, which would’ve erected seven large towers including a hotel, apartments, office buildings, a hockey arena, and a parking garage.

Fortunately, Seattle architect and civic activist Victor Steinbrueck opposed the project and founded the Friends of the Market organization in 1964. The two sides battled over the fate of the Market until it was finally added to the National Register of Historic Places in 1971, protecting it from development and ensuring it would remain in public hands.

The Pike Place Cinema – Circa 1970’s

In 1973, Seattle created the Pike Place Market Preservation and Development Authority to run the Market. Over the next decade, all the Market’s historic buildings were restored and renovated using the original plans, blueprints, and appropriate materials.

Pike Place Market announced a 74 million dollar expansion for its centennial anniversary celebration, adding more than 30,000 square feet of space and 47 new stalls for local businesses. The expanded market offers stunning views of Elliott Bay and the Olympic Mountains, ensuring Pike Place Market remains the perfect place to enjoy a cup of coffee or a bite to eat for tourists and locals alike.

THE EMERALD CITY’S CROWN JEWEL

Pike Place Market is a collective space where diverse people come together in celebration of food, life, and community. 

Since its founding, Pike Place Market has been a cherished local landmark. From the Pike Place Fish Market (where staff famously throw fish from display to the cashier) to its many annual events like the Chowder Cook-Off, the Taste of Pike Place Market, and Sunset Supper, the Market remains a vibrant community center for downtown Seattle.

Housing nearly five-hundred residents between eight different buildings, the Market also ensures Seattle’s artists, craftspeople, seniors, and low-wage workers have a stable, supportive home. Its founding values of quality, creativity, and affordability are alive today.

PIKE PLACE MARKET FACTS

  • The daily rent for any stall in 1911 was $0.20 a day.
  • The oldest business at Pike Place Market is the Virginia Inn, a restaurant on 1st Ave & Virginia St, opening in 1903 and still serving guests today!
  • Three Girls Bakery was the very first Seattle business to be owned solely by women. It opened in 1912.
  • The iconic neon sign and clock were installed in 1937.
  • Over a dozen languages are spoken and written at the market, including Spanish, Chinese, Hmong, Vietnamese, Hindi, Tagalog, Turkish, Russian, German, Japanese, French, and Arabic.
  • The Market Theater, Bead Zone, and Kells Irish Restaurant are among the locations in the market with a long history of hauntings.
  • Victor Steinbrueck was the individual who helped prevent the Markets’ destruction in 1971 and is also one of the three architects that designed the Space Needle. There is also the Victor Steinbrueck Park adjacent to the market.
  • The Gum Wall is a 15 feet brick wall covered in used chewing gum since 1993. In November 2015, the Pike Place Market Preservation & Development Authority decided to clean the wall; it took 130 hours to complete, with over 2,350 pounds (1,070 kg) of gum removed and disposed of. Within 24 hours of completion, people started placing gum on the wall again.
  • There are 13 locations throughout the Market where performers can entertain Market shoppers for an hour at a time. Painted musical notes mark the sidewalks where they stand, and the number painted on the note corresponds to the number of performers that can play there at one time.

Three words: WORTH THE WAIT. We finally stopped by on our last day in Seattle and were not disappointed. The line for piroshki was very small (1-2 min wait), and they just had a tray of rhubarb piroshki set out. We immediately scarfed down the beef & onion piroshki and a cheddar garlic roll. Both are so yummy, very substantial, and enough to share for lunch. Doubled up on those and then got a few more before heading to the airport: chicken curry, beef & cheese, rhubarb. Needless to say, they traveled well, and we feasted on all the yumminess, and all was well in the world again.”

Another month of exciting choices, savor our smoking or sweet summer seasonals. Both pies are handmade from scratch with only quality ingredients and stuffed full of deliciousness, they’re perfect for a hearty snack or a satisfying meal.

🍖 Summer is here and it’s the perfect time to enjoy our delicious BBQ Pork piroshky. This pie is made with hickory-smoked pork belly tossed in a sticky BBQ sauce and wrapped in dough that is baked to perfection. This is a dish that will tantalize your taste buds and leave you wanting more without having to fire up the grill.

🥧 There’s nothing like our Berry Bedazzle piroshky to get your mouth watering and your summer started! This delicious treat is made with blackberry and strawberry braided on sweet, laminated dough, and dusted with powdered sugar. It’s the perfect way to enjoy a taste of Grandma’s pie without all the work! So go ahead and indulge yourself – you deserve it!


Very small little Russian bakery that smells absolutely incredible just walking by on the street. They have quite a selection for how small and cramped it feels inside!! I got the Cinnamon Cardamom Braid which was so wonderfully sweet and delicious. My husband went with the more savory beef and cheese which he absolutely scarfed down. Such a great snack to start our Pikes Place market adventure!

Chocolate fanatics everywhere are celebrating World Chocolate Day on July 7th. This day allows us to celebrate the magical ingredient of Chocolate.

Chocolate comes from the seed of a tropical Theobroma cacao tree that has been cultivated for at least three millennia and grows in Mexico, Central America, and Northern South American countries like Columbia or Venezuela.

It is believed that World Chocolate Day celebrates the day that Chocolate was first introduced to Europe in 1550. Every year on July 7th, World Chocolate Day allows chocolate lovers around the world to indulge in their favorite treat without any guilt.

Piroshky Piroshky started with a simple dream: to bring the flavor of Eastern European baking to the Pacific Northwest. We opened our doors in 1992, and from the very beginning, our pies were a hit.

People lined up out the door to get their hands on our piroshky, and soon, we started to catch the attention of food critics and pie-lovers from all over. As word of mouth spread, Piroshky Piroshky has become celebrated worldwide.

In the years since, we’ve expanded our operations to include FREE local delivery, locations throughout the PNW, Catering, Food Trucks, and Events across the USA! We’re proud to have become a beloved staple in so many homes, and we can’t wait to see what the next 30 years have in store for us

Our Roots

Kotelnikov Family – with award from the Pike Place Market

Immigrants have always been a vital part of the fabric of America, and the story of Piroshky Piroshky is a perfect example of the American Dream in action.

Vladimir and Zina Kotelnikov were two immigrants from the Soviet Union in their 40s and 50s working their way through entry-level jobs before Piroshky Piroshky first opened its doors in the Pike Place Market in 1992.

The success of Piroshky Piroshky is a testament to the hard work and determination of its founders, and it stands as an inspiration of the American Dream at its best.  

Once upon a time…

Our Estonian roots trace back to a bakery named Tallinn, where Vladimir learned the baking trade from his teacher Masha.

Our Beginning

We first opened our doors on October 24th, 1992 in
Seattle’s famous Pike Place Market, started by the Kotelnikov family, with just
$1,200 to invest in the bakery. 

The bakery opening was accomplished with the help of friends and strangers many
of whom were immigrants of Russian descent. a very basic business plan –
(see below) and the dream of bringing a taste of Eastern Europe to the Pacific
Northwest.

By blending traditional recipes with local flavor, our selection of piroshky grew to offer a wide array of choices both savory and sweet. 

With this simple recipe for success, out of a tiny little bakery and humble beginnings, our oven’s aroma quickly created long lines.  

Each of our 32 different piroshky is made fresh by hand every day. From our Smoked Salmon Pate to our Uli’s Jalapeño Cheddar Sausage, from Apple Cinnamon Rolls to Cinnamon Cardamom Braids, every Piroshky we make follows thirty years of tradition.

While a lot has changed since 1992, what hasn’t is our piroshky are still individually made from scratch and hand-molded into their very own unique shapes for you.

When you’re stopping by Piroshky Piroshky bakery, you can rest assured that you are getting the tastiest piroshky around! After all, we have been serving our original recipes since 1992. Over time, we’ve grown from being a local favorite to a worldwide tourist destination. We’re celebrated among notable Chefs and hungry people alike.

Along the way, we’ve been voted one of “The 20 Most Iconic Food Destinations Across America” by the Smithsonian, and have been featured on several “Best Of” lists for Seattle and the USA as well as features on The Food Network & Travel Channel. 

Visitors have included politicians and celebrities. We’ve been interviewed by NPR, Wired, Bake Magazine, NY Times, Washington Post, CNN, Eater, and Fox News just to name a few. Our best-selling Beef and Cheese piroshky has award-winning, naturally-aged cheddar from Tillamook Cheese and fresh beef from Mondo & Son’s meatpacking.  This fourth-generation family-owned butcher shop uses locally sourced and sustainable proteins. Our Spinach, Ham & Cheese Piroshky contains their small-batch artisanal ham.

Our Planet

There are many ways we work a difference, from reducing energy consumption to recycling and composting. Piroshky Piroshky works diligently to do our part in preserving our environment for future generations.

  • We reduce our emissions by utilizing a digital store presence, hosting virtual meetings, and collaborating with local partners. 
  • Our kitchen is virtually waste-less as items are made to order. Any remaining materials are composted or recycled. Currently, our garbage is under 10% of our total waste! 
  • When you visit our stores, you’ll be handed your piroshky in a biodegradable paper bag. This minimal packaging is all you need to enjoy your Piroshky for now or to save for later, no utensils or plates are needed!  
  • For our shipped products, we send our chilled products with reusable ice packs and use Ingeo biopolymers in our packaging. Ingeo is made from starchy plants like corn and is grown right here in the United States. The starch from corn kernels has the added benefit of being compostable when it is finished being used.

Bonus Facts:

  • Piroshky Piroshky owns a trademark on the shape of our Smoked Salmon Pâté Piroshky. Only a few other companies, who were producing salmon piroshky of a similar shape before we secured the trademark, are allowed to duplicate our pattern.
  • Piroshky found its way to America with the surge in immigration among Russian Jews escaping religious persecution in the late nineteenth century.
  • The phrase on the back of our t-shirts (вот такие пироги) is pronounced “vote teh-KEE-yeh pyer-oh-GHEE” and translates as “These are the pies.” The phrase is colloquial; if declared confidently, it conveys strong confidence in the quality of our product.
  • Although potatoes make a satisfying filling for piroshky today, potatoes were not commonplace in Russia until the mid-nineteenth century. Before that, turnips and rutabagas were the primary root vegetables.

For our meat and protein needs, we are happy to partner with Mondo & Sons – a fourth generation family-owned butcher shop and meat processor focusing on locally sourced and sustainably raised proteins. They are custom crafters of small batch artisanal hams, bacon, sausage and dry aged meats.  

For our cheese piroshky, we work with another local partner – Tillamook! Since 1909, they’ve been dedicated to making the best cheese with the best ingredients. They work with local farmers, who cared for the land, which sustained healthier cows, which provided better milk – a recipe that hasn’t failed them in over a century. We are happy to work with partners who care so deeply about their ingredients and sustainable farming practices. 

And for our Uli’s Jalapeno & Cheddar Cheese Sausage, of course, we partner up with Uli’s Famous Sausage. Our Pike Place Market neighbor and a long-time partner, Uli’s Famous Sausage is locally owned and operated by German Master Butcher Uli Lengenberg, with over 40 years of experience in sausage production. Uli’s Famous Sausage is made daily from the best cuts of meat, the finest in-house blended spices, and, most importantly, with love for their craft and customers.   

Every day, we are proud to work with various local partners and small businesses all around the Pacific Northwest. It is of the utmost importance for us to continue contributing to the small business community in our region.

Here are some tasty tidbits about this flaky savory little pie of salmon.

About: 

Phinn is a piroshky filled with salmon pâté. When Phinn the Salmon Piroshky was just a little pie, they knew they wanted to be a star. Lucky for them, they were born with the perfect ingredients to achieve their dreams! Made in the Pacific Northwest, they originally called the Pike Place Market in Seattle home.

Inside a glass case on a countertop in a very tiny bakery, they found residence among the other delicious piroshky. Every day, once the ovens turned on, the aroma would waft out of the bakery and into the market, which would always create a line out of the door.

Behind the glass counter, they loved the way everyone in line looked at them with admiration and joy, and they wanted to make everyone feel the same.

Sometimes they could hear fishmongers at the Market Entrance throwing their relatives up in the air and people clapping with awe and joy, which always brings a lot of nostalgia from Salmon’s early days.

Phinn was happy knowing that people loved their food as much as they loved making it.

As much as they loved living in the bakery, the Salmon Piroshky would dream of adventure with the wish to warm hearts and hands everywhere.  Whether it was exploring the beautiful Pacific Northwest, going on a walk in their paper bag through the city, or cheering on the home team at a game, this little pie was made to be on the go!
